Marinated Chicken Skewers with Turmuric, Coriander, Lemon and more...
I'm one of those folks that likes to get Thai food, but is absolutely petrified with trying new things at Thai restaraunts lol. Because of that, I know that Chicken Satay is always a safe bet. These skewers are skinnied down from the traditional version, by using skinless chicken breast meat, rather than chicken thighs. They are marinated overnight in a mixture of coconut "milk", turmeric, garlic, pureed shallots, ground coriander, lemon juice, and awesome. To accomodate all of my amigos that don't own a grill... unlike EVERY OTHER FREAKIN Satay recipe out there that tells you to grill your skewers, I have instructions for using your oven's broiler.
These delicious, healthy and flavorful skewers are sure to please your guests. They're also great for relieving stress, because you get to skewer so many pieces of chicken, it's like an edible voodoo doll of deliciousness, that you get to dip in peanut sauce.
