Italian Sausage, Breading, "Cream Cheese" and Herbs.
I know that you hear this from me a lot.... but these are freaking awesome. While browsing online for snazzy and elegant appetizers, that DO NOT involve 2 ingredient-freakin-dough or air fried egg rolls, I tried to remember my mission statement... To take AMAZING, fatty, indulgent dishes... and ww-ify them. That led me to the food network's website, which made me start browsing their recipes. One of their highest rated appetizers is Ina Garten's italian sausage stuffed mushrooms. Loaded with full fat italian sausage, mascarpone cheese, bread crumbs, tons of parmesan and enough oil to fuel a WW2 Submarine. So, I set out to slash it down. I replaced the italian sausage with my 0 point ground turkey italian sausage, replaced the buttload of mascarpone cheese with strained Fage Greek yogurt (to act as cream cheese) and my low point crushed rice krispies breading, from my Onion Rings recipe, rather than regular bread crumbs. I then seasoned the ever livin heck out of the Greak Yogurt, added worchestershire sauce to add some savoriness, and the end result, is a low calorie, virtually fat free, healthy version... that will take the Pepsi-Challenge with any high end stuffed mushroom out there.
The above linked, free file, is NOT found in the pages of my Low Point Cooking Guide, that you can download for free here on my website. This recipe is for the Appetizers section of my upcoming second cookbook (and free download) that I'm working on. It will be filled to the brim with sauces, salad dressings, dips and gourmet, low point & calorie appetizers. This is appetizer #11 of AT LEAST 20.
